He will extend his power over many countries,

The king of the north will extend his power into many countries.
The king’s power will reach into many other/foreign lands

He will extend his power over many countries: The Hebrew phrase that the BSB translates as extend his power is literally “stretch out his hand.” This is an idiom that in this context means that the king of the north will come to have power in many countries besides his own. Here are some other ways to translate this:

As he gets country after country into his grasp (REB)

His power will reach into many other countries

He will conquer many countries (NLT)

and not even the land of Egypt will escape.

Even Egypt will not be able to defend itself against his power.
including the country/land of Egypt.

not even the land of Egypt will escape: The clause not even the land of Egypt will escape here means that the power of the king of the North would extend into Egypt. Here are some other ways to translate this:
