Here, the book of Leviticus switches from describing one hypothetical priest to describing the priesthood as a whole. As such, the words they and them refer to the Israelite priests. Here, the word it refers to the watch of Yahweh, that is, Yahweh’s commands to avoid contact with unclean things while performing sacrificial duties.
