The pronoun they refers to the Philistines who were fleeing from David’s army. It may be helpful to clarify this for your readers. Alternate translation: [And the Philistines abandoned]

Taking away the Philistines’ idols was a symbolic action that illustrated the character of David’s victory over the Philistines and their gods.
