OET (OET-LV)and he_is_saying to_him:
Every person is_presenting first the good wine, and the lessor whenever they_may_be_being_drunk, you have_kept the good wine until now.

OET (OET-RV)and exclaimed, “Most people supply the best wine at the beginning of the reception, and the cheaper stuff when people are a bit tipsy. But you’ve kept the best wine until last!”

uW Translation Notes:

Note 1 topic: figures-of-speech / hyperbole

πᾶς ἄνθρωπος

(Some words not found in SR-GNT: καί λέγει αὐτῷ Πᾶς ἄνθρωπος πρῶτον τόν καλόν οἶνον τίθησιν καί ὅταν μεθυσθῶσιν τόν ἐλάσσω σύ τετήρηκας τόν καλόν οἶνον ἕως ἄρτι)

Every man here is an exaggeration that refers to something being a common practice. If this might confuse your readers, you could use an equivalent expression. Alternate translation: [A man usually]

Note 2 topic: figures-of-speech / gendernotations

πᾶς ἄνθρωπος

(Some words not found in SR-GNT: καί λέγει αὐτῷ Πᾶς ἄνθρωπος πρῶτον τόν καλόν οἶνον τίθησιν καί ὅταν μεθυσθῶσιν τόν ἐλάσσω σύ τετήρηκας τόν καλόν οἶνον ἕως ἄρτι)

Although the term man is masculine, the head waiter is using the word here in a generic sense that includes both men and women. Alternate translation: [Every person]

Note 3 topic: figures-of-speech / explicit

καὶ ὅταν μεθυσθῶσιν τὸν ἐλάσσω

(Some words not found in SR-GNT: καί λέγει αὐτῷ Πᾶς ἄνθρωπος πρῶτον τόν καλόν οἶνον τίθησιν καί ὅταν μεθυσθῶσιν τόν ἐλάσσω σύ τετήρηκας τόν καλόν οἶνον ἕως ἄρτι)

This means that guests were given the cheaper wine, which is of lower quality and inferior flavor, after their senses had been dulled by drinking too much alcohol and were thus unable to tell that it was inferior wine. You could include this information if that would be helpful to your readers. Alternate translation: [and the cheaper wine when they have become drunk and unable to discern the quality of the wine]

2:1–10:42 Jesus illustrated his identity and work through the institutions and festivals of Judaism (see 2:1; 5:1).

OET (OET-LV)and he_is_saying to_him:

OET (OET-RV)and exclaimed, “Most people supply the best wine at the beginning of the reception, and the cheaper stuff when people are a bit tipsy. But you’ve kept the best wine until last!”

Note: The OET-RV is still only a first draft, and so far only a few words have been (mostly automatically) matched to the Hebrew or Greek words that they’re translated from.
