OET (OET-LV)But the eyes of_them were_being_restrained which to_ not _know him.

OET (OET-RV)but their eyes were restricted from being able to recognise him.

uW Translation Notes:

Note 1 topic: figures-of-speech / synecdoche

οἱ δὲ ὀφθαλμοὶ αὐτῶν ἐκρατοῦντο τοῦ μὴ ἐπιγνῶναι αὐτόν

the (Some words not found in SR-GNT: οἱ Δέ ὀφθαλμοί αὐτῶν ἐκρατοῦντο τοῦ μή ἐπιγνῶναι αὐτόν)

Luke uses one part of the men, their eyes, to speak of the capacity of the men themselves to recognize Jesus. Alternate translation: [But God prevented them from recognizing him]

Note 2 topic: figures-of-speech / metaphor

οἱ δὲ ὀφθαλμοὶ αὐτῶν ἐκρατοῦντο τοῦ μὴ ἐπιγνῶναι αὐτόν

the (Some words not found in SR-GNT: οἱ Δέ ὀφθαλμοί αὐτῶν ἐκρατοῦντο τοῦ μή ἐπιγνῶναι αὐτόν)

Luke uses the term held, as if someone were physically holding back the eyes, to mean “restrained.” Alternate translation: [But God prevented them from recognizing him]

Note 3 topic: figures-of-speech / activepassive

οἱ δὲ ὀφθαλμοὶ αὐτῶν ἐκρατοῦντο τοῦ μὴ ἐπιγνῶναι αὐτόν

the (Some words not found in SR-GNT: οἱ Δέ ὀφθαλμοί αὐτῶν ἐκρατοῦντο τοῦ μή ἐπιγνῶναι αὐτόν)

If it would be helpful in your language, you could express this with an active form, and you could state who was doing the action. Alternate translation: [But God prevented them from recognizing him]

TSN Tyndale Study Notes:

24:16 God kept them from recognizing him: The Greek uses a passive construction (they were kept from recognizing him) known as a “divine passive,” with God as the implied subject. God intentionally blinded their eyes until the moment of revelation, when Jesus broke bread with them (24:30-31; cp. 2 Kgs 6:17).

OET (OET-RV)but their eyes were restricted from being able to recognise him.

Note: The OET-RV is still only a first draft, and so far only a few words have been (mostly automatically) matched to the Hebrew or Greek words that they’re translated from.
