The implication is that this number represents only the adult men who could walk, since the census in Numbers 1 only counted adult men. You could include this information if that would be helpful to your readers. Alternate translation: [are 600,000 men on foot, plus the women and children]

The phrase on foot is a common expression of this culture that means “who walk.” If this phrase does not have that meaning in your language, you could use a comparable expression from your language that does have that meaning, or you could state the meaning plainly. Alternate translation: [who walk]

Moses is stating the pronoun you separately, even though the verb translated as you said already includes this meaning. He is doing that to emphasize that Yahweh was the one who said this. If a speaker of your language would use an explicit pronoun for the same purpose, you may want to use that construction in your translation. If not, your language may have other ways of showing that emphasis. Alternate translation: [but you definitely said]

Moses is leaving out some of the words that in many languages a sentence would need in order to be complete. You can supply these words from the context if that would be clearer in your language. Alternate translation: [and they shall eat flesh]

חֹ֥דֶשׁ יָמִֽים

month_of days

Moses is using the possessive form to describe a month that is made up of all its days.
