The psalmist is using the possessive form to describe sheep that are characterized by being slaughtered and eaten as food. In context, the emphasis seems to be on the slaughtering, as the parallel phrase “sheep of slaughter” in verse 22 indicates. If a speaker of your language would not use the possessive form for this, you could express this idea in another way. Alternate translation: [like sheep that are slaughtered]

The point of this comparison is that just as sheep that people slaughter for food are very vulnerable and easily killed, so the Judeans have become very vulnerable. If it would be helpful in your language, you could make this point explicitly. The point of comparison is the same in verse 22.
